Food Help After Stroke
~795,000 strokes annually in US (CDC). Survivors face: dysphagia (swallowing difficulty), one-sided body weakness, cooking difficulty, plus need for DASH diet to prevent second stroke. This page lists specific resources for post-stroke recovery.
1. Dysphagia — adapted food
~50% of stroke survivors have dysphagia initially. Under IDDSI (International Dysphagia Diet Standardisation Initiative), food is classified levels 0-7:
- Liquids: 0-4 (thin to extremely thick)
- Food: 3-7 (liquidized to regular)
- SLP evaluates what level you need and teaches safe techniques
- Thickeners — SimplyThick, Thick-It, Thick & Easy. Covered by Medicare Advantage in some cases. CVS, Walgreens, Amazon (EBT)
- Commercial pre-pureed meals — Hormel Thick & Easy, Magic Cup, Mom\u0027s Meals (some covered by Medicare Advantage or Medicaid)
2. SLP — swallow therapy
- Speech-Language Pathologist (SLP) — evaluates swallowing via MBSS (Modified Barium Swallow Study) or FEES (Fiberoptic Endoscopic Evaluation of Swallowing)
- Covered by Medicare + Medicaid + private insurance after stroke

- Telehealth SLP — covered under expanded regulations. Useful for rural recovery.
3. OT — meal prep with disability
Occupational Therapists (OTs) train survivors to cook and eat with one side of body affected. Specialized equipment:
- Adapted cutting boards — with spikes to hold vegetables, ridges for non-slip
- Weighted / built-up grip utensils — forks and spoons with thick handles for weak hands
- Two-handled cups — stable for drinking
- Can / bottle openers — electric automatic
- Plates with rims — raised edges to scoop food with utensil
- Equipment covered under Medicare Part B or Medicaid Durable Medical Equipment (DME)
4. DASH diet — secondary prevention
DASH (Dietary Approaches to Stop Hypertension) is AHA-recommended post-stroke diet to prevent second stroke. Emphasis on:
- Fruits + vegetables (8-10 servings / day)
- Whole grains (6-8 servings / day)
- Low-fat dairy (2-3 servings / day)
- Lean proteins: chicken, fish, beans, nuts
- Sodium limited: <1,500-2,300 mg/day
- Sugar limited: <5 servings / week

5. Meals on Wheels — adapted meals
- Meals on Wheels frequently serves stroke survivors
- Adapted meals: low-sodium, puréed options for dysphagia, easy-to-eat
- Verify specific options with your local program

- Often free for 60+ stroke survivors post-discharge
6. SNAP — stroke qualifies as disability
- Stroke with sequelae (paralysis, aphasia, cognitive) qualifies for SSDI under SSA listing 11.04 (Vascular insult)
- Listing 11.04 requires: ineffective communication 3 months post-stroke, OR substantial movement difficulty
- SSDI makes you automatically "disabled" for SNAP — medical deduction from day 1
- Apply early post-stroke — processing typically 3-6 months

7. If you have aphasia — application help
~25% of survivors have aphasia (language difficulty). Applying for SNAP / SSDI can be hard. Resources:
